This is a very tasty and fast recipe to prepare a tomato sauce for the original Italian filled fresh pasta.
Each Italian likes eat the filled fresh pasta because it is very good and tasty. There are many varieties of filled pasta and many kind of sauce, but today I propose my sauce for filled fresh pasta with ricotta cheese and spinach.
This Pasta is very good, fast and also easy to prepare, factors to be reckoned with.
To get an excellent result I used the Fazzoletti Pasta with ricotta cheese and spinach by Tradizioni Padane, an italian company craft pasta, and I chose the Aroma Fresco an aromatic herbs mix by Antica Macelleria Falorni.
INGREDIENTS FOR 4 PEOPLE
5 oz (150 g) for person of filled fresh pasta with ricotta cheese and spinach
1 tbsp of extra vergin olive oil
3 medium vine tomatoes (if you want more tomato sauce add 1/2 tomatoes)
Half tbsp. dried aromatic herbs (mix of rosemary, thyme, sage, bay leaves)
About a teaspoon of tuna roe (bottarga) + to taste for each dish
salt if necessary
Attention Please: the tuna roe is very salted, pay attention when you added salt
1 – Cut vines tomatoes in cubes and pour them in a pan with oil, the dried herbs and cook, mixing occasionally.
2 – Put water in a pot and bring it to the boil, then add salt.
3 – Pour the Pasta in the pot, cook it one minute less than the recommended time on the box then drain and pour in the pan with tomato sauce and ultimate the cook, if necessaey add 1 or 2 tablespoon of cooking water.
5 – Add the tuna roe, mixing then do the portions.
6 – If you want give a strong taste add 1 teaspoon of tuna roe for each dish.
7 – Serve
